    I always hesitate when considering freezing something new, I want to hear others experiances. This month Cook's Illustrated magazine says that Ricotts freezes well. However,you need to used the thawed product in something cooked.Using it raw gave it too grainy of a texture. They used it in a cheesecake...

    3 lbs! I guess I think big like 100 lbs. Last year I was already to freeze corn and John showed up with 5 cases of pork roasts. So much for freezing corn :) I just never know what he'll find.

    I'm envious, I love garlic! You don't need to cook it first to freeze it. You can freeze it whole, then break off cloves as needed or you can chop and freeze it that way (raw). Or you can puree it in oil and freeze it. I like the puree because it doesn't freeze solid and you can just scrape...
