My mom is also one of those "little bit diabetic" folks. Nevermind that she's now fully disabled from diabetic neuropathy, that she's had a heart attack, pneumonia, and intestinal bleed in the last year - she's not giving up her fast food.

Similar to what Cindy suggested, you might put a damp towel over the loaf and microwave it for 15 seconds or so...I've done that with round sourdough loaves and it at least made them soft enough to slice.

Dealing with the gestational version right now, but my mama has it bad. Of course, her response to the diagnosis is to say, "Them doctors don't know what they're talking about," refuse her meds, and continue eating fast food every meal.

Beautiful day here, sunny and warm. Went to all-you-can eat sushi, kids eat free, for lunch. I wanted a nice family meal together for Mother's Day :)
Other than that, a quiet day. My oldest son's kindergarten class did their Mother's Day tea this morning, so I got to go listen to them sing and get a card and a little handpainted ...

Cereal with milk every morning; now it's a special high-fiber, high-protein cereal, but still cereal. Apples and oranges are my snacks, and I can't think of a day when I didn't have cheese.

Big shop tomorrow. I've developed gestational diabetes, so I'm trying to eat a low GI diet. Picking up kale, red peppers, green peppers, apples, organges, green beans, romaine lettuce, red curry paste, tahini, salmon, barley, and garlic.
