• Re: "Putting by" food for the winter
Oh, I see. Well, they're kind of fun to do up anyway.
I have acquired a bushel of apples. I want to can some to use in a recipe that DH likes. Plan to use some of the peels for potpourri. Admittedly I am overwhelmed at the thought of this many apples, but refuse to allow them to waste. ...

Yes, I too feel pressured sometimes. Especially when I have lots that needs to be done and not enough time to do it all. Something must suffer somewhere. Right now I have 2 buckets of pears waiting on me, and a zillion things to do today. Like you said Pat, it is my choice to do this. But I prefer this way of life to others that I could ...

  • Re: Is this corn too old to freeze?

Cinnamonhuskies, How does it smell? Can you pierce a kernel easily with your nail? That is how I judge it. But here corn seems to go bad quickly, guess that it is because of the heat. It has to be put up the same day that it is pulled. I had some get too hard this year because I was so tired that I could not finish it the same day, but ...
Pressure-can a rich mixture of pureed green tomatoes, onions, garlic, and green peppers for chile verde, with chicken or pork and new potatoes. You can also make a dehydrated sprinkle of red peppers, basil or oregano, granulated garlic, and black pepper.  Great on salads!
Thanks for the ...

I think we need to pay attention to those feelings; sometimes we ignore what few "instincts" we have left
Just saying it makes it seem even more important. Instinct, the Lord's direction, or whatever it is that drives us, we should pay attention to ...

  • Re: "Putting by" food for the winter
To do that, I needed to already have the freezer containers, the bottles, & the leather trays or molds. At this point in my life, all I need is the food itself, & I can "put by". To me that is a great feeling of increased security.
I agree completely. Having the things ...

What a wonderful idea! We were cutting back for this Christmas anyway, so this idea will work wonderfully. Yes, jalapeno jelly is good with crackers and cream cheese! Maybe I should do another making to go with the dried peppers for gifts. Thanks!
trying to do something new with all these peppers
Please share your ideas! My pepper plants have really produced this year! Looking for new ideas. Have made pickled peppers, relishes, dehydrated some. What else can be done? I have run out of ideas and can't stand the idea of wasting them! I ...

  • Re: "Putting by" food for the winter

Ouch!!! That is a lot! I can get Elberta peaches for about $12 a box at the Farmer's Market, that is for the ones grown in Georgia. The other peaches  go for about $9 or $10 a box. Elbertas seem to work better for canning, the others work better for freezing. Figs are plentiful here. We have a couple of trees in the yard, as most ...

Thanks Pat! Peach butter is so yummy! Plan to make that and some peach preserves too. I made fig preserves for the first time this year and was pleased with the results. Not as good as my Grandmother's or my Mother's, but good.
