    Watermelon Honey

     

    Watermelon Honey

    Take one very large watermelon and remove all the seeds.  Cut into chunks and fill a large crockpot that has been sprayed with vegetable spray.  Put on low overnight(8-12 hours).  When the watermelon has become liquid, remove the lid from the crockpot and stir in 2 cups of sugar and let it thicken to a honey consistency.  The time depends on the water content of the watermelon, just keep cooking it down.  One 10 pound watermelon makes about 1 pint of watermelon honey.  You can add cinnamon sticks, star anise, whole allspice, whole nutmeg, mace and any combination to add wonderful flavor to this honey.

    We use it for pancakes, waffles, baking powder biscuits, English muffins, pb & honey sandwiches, etc.  It is wonderful!
