Pinto bean fudge

    Pinto bean fudge

    Mash 1 cup of warm cooked pinto beans. Add 3/4 cup melted margarine or butter, 1 cup of cocoa powder, and 1 TB of vanilla. Mix in 2 pounds (usually 1 bag) of powdered sugar gradually. Add 1 cup of chopped nuts, if desired. Pres into a 9x13 nonstick or oiled pan, and store in the fridge.

    i am going to make this, i have a ton of pinto beans in my pantry

    I've heard of this type recipe before, just have been wary of it. Not that I don't love some pinto beans, but just have never used them in making candy, yet I may have to give these a try! Thanks for the recipe..you post the most interesting threads! Smile

    I've only made this once before, and I thought to myself "Surely this needs more pinto bean than that! Fiber after all!" and I think I tripled or quadrupled the pinto bean. The fudge never really set up and although it tasted fine, it didn't taste like fudge. I'm sure if you actually follow the recipe it'll be great, since even with all that extra bean it tasted sweet and chocolatey.

    I will try it! Thanks! I'll let ya know how it comes out. Actually, I think I'll make this one without telling my dh or ds what's in it and just get their reaction! Wink

    Replacing the oil in brownies with pumpkin puree is another sneaky thing to do. I can't tell a taste difference.

    Interesting about the pumpkin puree! I am going to buy some powdered sugar next time I go to the store. That's the only ingredient I'm misisng for the fudge.

     I have a bunch of pinto beans in my pantry also. I would like to try this recipe. My husband hates pinto beans. Maybe I could get him to eat this. He is not a big fan of sweets either though. The children would probably be willing to try it since it is chocolate.I will have to make it while everyone is at work and school.
