Deb, do you find VRG's magazine to be worth the investment? I've had so many disappointing subscriptions (Veg Times, for example).

Dear Truepeace, VEGETARIAN TIMES is so full of advertisements masking as articles -- & the recipes are so cheese-heavy -- that I don't like it either.
The Vegetarian Resources Group & VEGETARIAN NEWS are QUITE different. It's too bad that they can only affordc to issue the magazine quarterly. Go online (I think it's vrg.org) to see some old issues. I think that you'll like the amazing range of cuisines & types of food they spot-light. They even have created vegan wedding cake! They sell a pamphlet giving ingredients that are or aren't vegan, a list of vegan restaurants throughout (I think it is) North America, & much more. I really think that you'll like this organization.

Kosher gelatin, I thought it was not kosher, yes Im a practing jew not even in my deli would I serve that..

gelatin is collagen.(think of that the next time that spendthrift from down the block has injections) it is boiled out of animal products: bovine, porcine, fish. carageenan, agar and a few other plants can jell in a similar way, and those, when packed under supervision are kosher certified. I will use agar from whatever source (not that I use a lot of it, but I'm playing with some vegan baking: faux-stess cupcakes: creme filling and all)
