Cooking For One Gripes and How I Deal With It

    I do that sometimes... the problem is, I tend to forget things like that are in the freezer... and then they get freezer burned.  I really need to work out a better system for freezing leftovers - and for remembering to eat them!
     

    have you tried putting a list on the freezer and marking it off as you eat them or adding to it as you make new food?

    Yes... but I'm really bad about keeping up with it.  I need to dump the entire freezing, check the dates on everything, and reload it - same with the second one in the basement fridge.

    I much prefer cooking for friends and family, but my job has taken me away from home and I spend a fair amount of time cooking for myself.  I have learned to LOVE my foodsaver and my freezer.  The toaster oven is a lifesaver as well, because I live in FL.  HATE to turn on the whole oven for a little chicken breast!

     One of my favorite things is pizza.  I make my own crust, which makes enough for 4-6 individual pizzas.  I will make one pizza, then I will shape the remaining dough into individual pies and stick them in the freezer.  When I come home last minute, all I have to do is take a frozen crust out of the freezer, spread some sauce and (usually also frozen!) cheese on it and pop it in the oven!  Add whatever toppings are available as necessary!  Awesome, fast, and CHEAP!

     One of my friends was over the other day and laughed at my freezer list, but I don't care.  He goes out to eat all the time.  He acts like he's putting me out when he comes over and I want to use up some of my food instead of going out and spending $20 on a mediocre meal (I'd way rather cook than spend money I don't have eating out!).  I'm proud of the fact that I make my own hot pockets (also with my homemade pizza dough) and uncrustables for last minute lunches and have an assortment of dinners stashed in my freezer!

    Even in WI, I feel the same way! I use mine a lot for fries too! Smile

    He acts like he's putting me out when he comes over and I want to use up some of my food instead of going out and spending $20 on a mediocre meal (I'd way rather cook than spend money I don't have eating out!). 

    I have a friend like this too... he eats out more than in. He won't spend the $20, but it's normally $5-10 for the day. He doesn't want to eat "my" food but I enjoy cooking for someone other than just me, which he does know, so it's not much of an argument. Sometimes, if he's still acting like he's eating "my" food, I'll ask him to bring something (like hamburger buns if I was doing burgers).

     I have just started cooking for one - I love reading all the old posts and getting inspiration!  I have in the last three years gone from cooking for 7 to cooking for two.  Now it is just me, thankfully it is temporary.  I have a routine of cooking once and eating it again the next night.  So far, it seems to be working for me.

    Well, you could continue to cook for 7...and freeze. You have more experience of bulk cooking than most who are single! (even if temporary)
