Since the word isin Hebrew, you can spell it in English however you like.
Matzoh is considered to be an unleavened bread. The Bible states that, in their haste to leave Egypt the land of slavery, the Hebrews had no time to add yeast & rise their bread. We Jews observe the festival of Passover/Pesach to commemorate this & related event. BTW, if you're interested in cooking with matzoh, try using small pieces ("matzoh farfel") in a "kugel," sweet pudding like apple, raisin, prunes, & cinnamon or savory, like Jerusalem (black)pepper kugel. Kugels are simply delicous. Also, you can make "matzo brie" (with regular matzoh, not the farfel), which is essentially scrambled eggs with matzoh pieces, but the whole tastes far more delicious than teh sum of its parts.
