    Buying canned or frozen corn kernels

    Dear All, It just dawned on me this AM that I really should start stocking up on corn, the vegetable.  I don't eat poultry or meat at home (have a dairy Kosher kitchen), so am not affected by their rapid increase due to high costs of grain/feed.  But the corn itself, ah, I have to start stock-piling.  Since I am now blessed by a full chest-freezer, I'll be getting the canned goods.

     I personnaly do not care for the texture of canned corn (unless creamed..yum!)  DH and I are very partial to Walmarts frozen white corn at .97 for a 16 oz bag (about 2-3 meals for us)

    Corn is about the only vegetable that I like either way. I keep canned corn stocked up, as my freezer space is limited. All other vegetables are either fresh or frozen. Edey

    I probably won't stock-pile from the store because this year, I really want to freeze, can, or dehydrate corn and other fresh veggies when they're in season.  Hope to stock up that way.  If it's not out of my garden, I want to go to the farmers markets or road-side stands to buy local.  I like both canned and frozen corn, and especially sweet corn on the cob.  It seems when we buy the bag of frozen, we use one half for a meal, then the other half ends up with freezer burn.  So usually I get the canned sweet corn niblets.

     Deb, that makes sense that the price and avalibilty of corn will be a problem. We eat a lot of corn. I will be buying some to stock up . Thanks for your wisdom. Babs

    I prefer canned corn (not creamed) over frozen unless it is the green giant small frozen corn in sauce.  But I only like green giant or del monte.  I buy a case on sale. I do have the big bags of frozen corn which I buy on occasion but doesn't taste as good. prefer green giant.   Of course fresh corn is the best!

     Deb ~ I buy fresh first, then frozen and last canned whole kernel.  We also like creamed corn in the can.  I buy fresh first as we love to grill it, that said it only comes during harvest seasons, so it is limited.  I freeze my own corn on the cob the old way I was taught, and we still get to enjoy fresh tasting corn on the cob from the grill.  I do stock pile bagged whole corn to dehydrate, I dont have to cut it from the cob and it is fresh and sweet this way.  I use some of the frozen whole kernel in soups and stews.  I like to keep canned corn(especially the type with cut peppers and onions)on hand for direct eating, salads, for mixing into salsa's to freshen the flavors, adding to casseroles, etc.

    I use canned cream corn to add to my cornbreads, use as a gravy over mashed potatoes, as a topping for baked potatoes, add to my corn fritters to keep them moist, and I add a can to my savory dill quick bread.   And I mix one can of creamed with one can of whole for Brian as a side dish.

    When it is freshly havested I like to decorn the cob and make corn cob jelly, mmmmmmmmm!

     We love the fresh corn. It isnt ready here until first of Aug then on til end of Sept. The price for a doz ears has gone up for the last three years. I am sure that we will see more increase. I have tried to grow it in my home garden but the coons eat it. We always buy several bushel to freeze as creamed corn, my familys favorite. Thanfulf that we have several large farms that sell local corn here.

    Michelle, how do you freeze yours on the cob? I have tried several differnent ways but the DH hasnt found one he likes. Babs

    I have read more than once that frozen vegetables are almost always superior to fresh vegetables and always better than canned.  The reason is that frozen vegetables are frozen very quickly after they are picked, so they retain the most amount of nutrients.  Fresh foods in your grocery store at a lot longer away from the field and have been leeching nutrients all that time.  Canned veggies usually have added salt and many of their nutrients are poured out in the juice. 

    The exception to this is 1) carrots: they are actually better for you fresh than frozen; 2) local vegetables: these have not been picked long, so they will have similar nutritional content to frozen vegetables (and will generally taste better).

     Frozen carrots are awful. I tried to freeze some . We ate them but never again. Easy to home can too. Babs
