Are you dealing with links or bulk Italian sausage?
Is it mild or hot?
I might precook the sausage and use it in a veggie fritata.
Or, if nothing sounds appealing right now, cook and freeze it. Then it'll be handy to add to sausage and kale soup, or in scrambled eggs, or on top of a pizza, or sauted with onions and green peppers and serve in your favorite kind of roll.
Don't know if any of that sounds good to you, though, or if it fits with how you like to eat.
