Eating anything from the garden yet?

    I have fresh parsley, sage, rosemary and my mint is just growing up with the warm weather.

     I saw our first springs of peppermint today.  We used lettuce from under the cloches for the salad for Easter dinner today, & it was so good - tastes so much better when it has just been picked.

    Kale and some onions that were too small to pick last fall so I left them in the ground- used them as green onions.  Same for the kale, except this spring they have already grown big and leafy and were very tasty.  The ones that are left look like they are growing a stalk so I need to pull them.  Next year going to let some kale overwinter again - it has been really nice to pick fresh greens so early in the year. (we also had a long stretch of very unseasonable warm weather in Feb, so everything popped up and leafed out early).

    our strawberries have popped and we had them we had some spring onions .  it still early.

    Not yet... my biggest plants are 2-3 inches high

    Shawn, I grow a ton of fresh sorrel and have not found ANY edible ways to eat it. It's too sour for our liking... I have tried many ways to enjoy it - steamed, sauteed, soups, salads, sandwich fillers... ideas for quiche... etc and NO LUCk. How are you using yours?

    Tonight I enjoyed picking pineapple mint from my mint plants to go on top of homemade pea and zucchini bisque soup... I have not spring planted yet and with this rain off and on I do not intend to for awhile either. This happens every year. Whatever is growing right now is coming back up or been harvesting since last summer's garden adventures: French sorrel, assorted colored chard, various herbs like oregano, marjoram, mints, lemon grass, rosemary, lavendar, a little bit of chives, sage, etc. and some strawberries just started to blossom - I saw one baby strawberry forming! what a joy! I had one random green onion growing, not sure if the rain ruined it though... need to take a look.

    Youngest DD was home for a visit today.  We had another sweet spring salad (this is quickly becoming my favorite salad) with chicken (from the freezer) & mixed summer squash for dinner.  The mixed SS was from the garden last year, canned in homemade tomato sauce with a couple small onions, so from the pantry. The sweet spring salad was fresh Buttercrunch lettuce from the garden, with one or two green onion"tops" ( also from the gaden) sliced thinly, with 1/2 a can of drained mandarin oranges, a TBSP of golden raisins, & a TBSP of dried cranberries on top ( all from the pantry).  We ate it with the citrus dressing from the Prudent Homemaker site.

    I could seriously eat this salad every day, & once the lettuce is in full production, I may do just that!
