In addition to the things Gayla mentioned, I make quiches, frittatas and omelets with eggs.  It's a great protein source and it's a lot cheaper than meat.

Stir a beaten egg into a warmed can of spinach - continue heating until the egg is done.  Serve with a little vinegar on top....Liz.

Mostly as scrambled eggs or omelets, often as quiches or fritattas, sometimes as boiled eggs or deviled eggs. I like the idea of creamed eggs or curried eggs as an entree, but I haven't tried them yet.

Hard boiled only. Any egg with its yolk showing is off limits to me.

I use eggs in omlets ( sp?), baked goods, puddings, quiche, fried or scrambled for meals, deviled eggs, chopped hard boiled eggs on lettuce based salads, in my tuna and chicken salad and sliced onto the top of potatoe salad.

I also use it for stratas, layered baked egg dish with a starch, additional protein, spices and cheese.  All in one breakfast casserole.

I also like to make fried rice and use scrambled eggs in that.

    I adore Denver sandwiches too.
