    Uses for Eggs?

     

    I am overloaded on duck eggs. Since I don't sell those, I need some egg recipes. I was thinking about making noodles with some of them. It's been a long time since I made homemade noodles, does anyone have good noodle recipes that use the whole egg and not just yolks? Any other egg dishes? We're sick of oven omelets...  Confused

    Ideas for extra eggs--wish I had that problem!

    french toast and pancakes

    old fashioned bread pudding and rice pudding

    custard

    spagetti pie--basically pasta, sauces, meat if you eat it, seasonings, cheese, beat a few eggs together, mix in well, bake in oven, slice and enjoy

    add to stir fry for a tasty protein boost

    ditto for a pot of homemade soup--I wisk eggs hard, then continue stirring while pouring into the pot

    egg salad sandwiches

    deviled eggs

    chopped boiled eggs for salad add ins

    old fashioned egg nog

    maybe you can scramble some up and freeze them?  They will probably be watery when thawed but would be a tasty stir in for soups, none the less

    Of course, extended family and friends tell us we "eat weird"  lol!

    Here's a recipe for noodles that have more of a dumpling texture, but not taste.

    3 1/2 cups sifted flour
    1 TBS oil
    5 eggs (this is for chicken eggs; you'll have to adjust for duck eggs)
    1 tsp salt

    Beat eggs with oil and salt, pour into flour a little at a time, mixing with your fingers. Work until the dough is fairly smooth. It will be quite stiff. Knead for a minute, then cover with a damp cloth and let it rest for 30 minutes. Roll thinly on floured board, cut into 1/4 inch strips (more or less) and boil until done.

    I usually make these with a little bit of chicken or turkey, plus some bouillon for added flavor.

    German Pancakes

     

    6 eggs

    1 C milk

    1 C flour

    1/4 T. salt 

    4 T. butter

    Melt butter in two pie plates or large skillet, combine other ingrd, beat and put in pans.  Bake at 450 for 20 minutes.  Serve immediately for best effect.  Topping suggestions- apples sauted in butter and brown sugar, hot fudge, maple syrup, or may fold in fruit or chocolate chips before baking and just dust with powdered sugar.  Good breakfast, brunch, dessert, or  at our house we have it for dinner-

    Our vegetarian response to Dr. Seuss-

     

    Green Eggs, No Ham

     

    375 25 min.

     

    12 eggs

    1 box spinach

    1 lb. grated swiss

    garlic, nutmeg, salt and pepper

    1 c. ricotta

     

    mix, put in greased 11 x 17 pan, stir occasionally while baking.

    Chiffon cake....kind of like angel food, only with the yolks.  Most recipes for chiffon cake call for a cup or so of eggs.

    Hi cinnamonhuskies,

    You can always make a meringue from the left over egg whites and use it for an angel food cake, a pavlova or stuff like that. You can also make make homemade mayonese or homemade icecream. If you make homemade mayonese then you could use it to make an egg salad of some sort, mayonese + diced hard boiled eggs.  You might even make some homamade bread to go with the salad :) 

    I like to fry an egg, toast a bread and dice both to throw over a salad, also I like to have a newly (still a little warm) sliced egg on top of a buttered bread.

    You can also make a desert from a water dough (I don´t know what it is called in english - maybe someone recognizes it and can post the right name). You make little buns and put whipped cream and jelly in them. You could also use them as bread and have your egg salat with them :) I´ll let the recipie follow, it is in the metric system, but someone might regongnize it and post a comparable one in the US system.   

    2 1/2  dl water 
    50 gr. butter
    a pinch of salt
    175 gr. flour
    4-6 eggs
    2 tsp. baking soda

    Boil water, butter and salt in a pot. Remove from heat and the flour sifted and stirred to the mixture. but it  back on the heat and stir for one minute.

    Put the douch in a bowl and let it cool. Stir the eggs, one by one until the dough has reached the right consistence. It should be smooth and shiny and hang from the spoon.

    Use a spoon and put in little dabs onto a baking plate and bake for 30 min. at 180 °C. Do not open the oven for the first 20 min or the buns will fall. Best served cold, with whipped cream and jelly in the middle and some chocolade on top. It is ok to use it as regular buns, they are very airy.

    Hope that you can use some of my ideas, I´m more used to use the eggs in baking than in dinner making.

    1. Egg Salad Sandwiches

    2. Deviled Eggs

    3. French Toast

    4. Pancakes

    5. Hard Boiled Eggs

    6. Pickled Eggs in Pickled Beet Juice (also known as RED eggs )

    7. Find a recipe for homemade egg noodles and make some

    8. Scrambled eggs for dinner

    9. Fried potatoes and eggs for breakfast

    10. Poached Eggs and toast for a quick dinner

    11. Sliced Eggs in Salad

    12. Potato salad

    13. Make a pound cake

    14. Garnish some Top Ramen

    15. Toad in the hole ( Take a piece of bread. lightly butter it. Brown on one side in a pan. Pop an egg in the center, and cook till done. Kids love this.

    In American- the Cream Puff!  We lived in Wisconsin for two years- anyone else here had the famous Wisconsin State Fair Cream Puffs?  Delicious!
