    Sesame Ginger Dressing

     

    Sesame Ginger Dressing

    Like those tasty dressings at expensive Japanese restaurants.

    1 cup minced onion
    1 cup peanut oil
    3 tablespoons sesame oil
    2/3 cup rice vinegar
    1/4 cup chamomile tea, green tea or water
    1/4 cup minced fresh ginger
    1/4 cup minced celery
    1/4 cup ketchup OR 2 T dried tomatoes in oil
    2 tablespoons soy sauce I use lower sodium soy sauce
    1 tablespoon sugar
    1 tablespoon lemon juice
    1 teaspoon minced garlic
    1/4 teaspoon black pepper
    OPTIONAL, 2-3 tablespoons sesame seeds
    OPTIONAL, few drops chili oil

    Combine all ingredients in a food processor (will be 2 batches in a blender). You know to adjust the lemon, sweet and salt a little depending on your salad, right? Blend on high speed for 30-60 seconds or until all the chunks are well-pureed. Refrigerate, shake before using. Makes about 1 quart.

     I keep it on hand all the time, I love to use it with pasta! ; )
