Came across this recipe when I bought down my recipe box (old computer diskette holder) to clean.. posted the recipe instead :) ...a favorite from Better Homes and Gardens, warning...not popular with under 6 set unless they like spicy. You have to watch the salsa because if you are a bit short on it then it can be dry. The recipe is for 8 or 4 servings, I put the 4 servings amounts in brackets.
Nacho Turkey Casserole
5 (2 1/2) cups of slightly crushed tortilla chips
4 (2) cups of cubed cooked turkey or chicken
2 (1) 16oz jars salsa
1 10oz pkg (1 cup) frozen or canned whole kernel corn
1/2 (1/4) cup dairy sour cream
2 (1) tbsp all purpose flour
1 cup 4oz (1/2 cup 2oz) shredded monterey jack cheese with jalapeno peppers or mozzarella cheese
optional ....one thinly sliced jalapeno chile pepper
1) lightly grease a 3 (2) quart rectangular baking dish. Place 3 ( 1 1/2) cups of the tortilla chips in bottom of dish. In a large bowl combine turkey, salsa,corn,sour cream, and flour, spoon over tortilla chips.
2) bake uncovered in a 350 degree oven for 25 min. sprinkle with remaining chips and cheese. bake, uncovered for 5 to 10 mins or til heated though. top with jalapenos if desired.
The Mexican restaurant close by has the real version of this dish....so yummy..called Chiliquiles - broken sombrero chips cooked in red salsa, available chicken, beef or chorizo). They do it with onions and cover it with sour cream and cheese. a favorite of ours..probably why I haven't made this casserole for a while!
