P.B. oatmeal muffins

    P.B. oatmeal muffins

    I've been using this recipe for years - I think it's from a homesteading magazine, but I can't remember for sure.  These are not the super-sweet, cupcake-y type muffins that are out there now.  I love them with a boiled egg when I need a b'fast to go...

    • 1/2 c. both peanut butter and brown sugar
    • 1/4 c. margarine
    • 1 egg
    • 3/4 c. milk
    • 1 t. vanilla
    • 1 c. whole wheat flour
    • 1/2 c. white flour
    • 1 c. old-fashioned oats (not instant)
    • 2 t. baking powder
    • 1/2 t. salt
    • good pinch of nutmeg

    Beat p.b., margarine, brown sugar and egg together, then add vanilla.  Separately, stir together flours, oats, baking powder, salt and nutmeg.  Combine with p.b. mixture.  Spoon into a greased muffin tin and bake at 350 degrees for about 25 minutes.

    I've made them with all white flour with good results, but they're probably not as healthy.  Don't skip the nutmeg; it really brings out the flavor!  Liz

    My problem is that peanut butter and nut products are not allowed in schools and preschools due to allergys. so I have will have to convince my dd to eat different sandwiches by gr 1.

    Ouch, you kinda hate to break the p.b. habit, don't ya - it's a filling, healthy and not to mention frugal, sandwich.  Will you be trying her on fruits and cheeses, maybe?  Mine liked to take jerky in their lunches and sometimes stuffed celery...there's lots of alternatives these days, thankfully...Liz

    I know! She only started eating sandwiches about a year ago. Fruits, cheese etc no problem.  I have strange kids...don't like jam, or Nutella etc in bread. Like sweets!  Everything was picnic style, I would just put ham, cheese, bread or crackers, grapes on a plate and she would eat it. but put ham and cheese and bread together ...no dice. She will eat pb 3 times a day so it is easy to feed her in a pinch.  Sandwiches are so easy. She likes grilled cheese. Takes after daddy in picky eating except no allergies.  So lots of homemade lunchables. At least prepackaged goodies are not off the list like preschool. the horror of healthy eating LOL!   I have a year to train her with lunches.  We are working on dinner, with dessert bribes...made chicken strips with shake & bake, corn and potatoes  (she eats fast food or premade ones, loves corn) for dinner. She says yuck before trying anything and runs off to her bed. Her younger brother says Mom whats wrong with dinner, why doesn't Johanna want to eat it?  so daddy had a talk with her. My son is a good eater (takes after mom lol)

    Seems everybody gets at least one picky eater!  My pickiest is 22 now and still living at home and working after college.  She's into taking these "bento" boxes for her lunch at work - an Asian thing.  Look like little decorated, stackable tupperware boxes and you cut-up and display the food just so, sometimes using a theme, then the boxes have a matching elastic hair-tie looking thing for bundling them up and also has built-in chopsticks...it's creative-looking and she spends a lot of time with it, then takes a pic and puts it on a website where they all compare - go figure!  BUT - she now eats fruit and sometimes even green stuff, so all is not lost!  She was always my 'artsy' one and really enjoys planning out the 'scene' for her lunch.

    You're very smart in finding different ways to present food - I would have tea parties often with my kids, and put a plate together like you mention, cutting up just so, cubes of this, strips of that....  It made even leftovers more fun and interesting!   Ahhh, what we do for our little ones...Liz

    Thanks! I have had lots of practice with her father!  I have two picky eaters! dd and dh. He say she took after him in liking puzzles etc and it turned out to be more!  Actually she is not too bad since she is young and has a lot of the typical dislikes of young kids about spicy stuff etc. Doesn't like beef. Likes plainer food, pasta with cheese, no tomato sauce unless it is that Dora canned stuff. LIke her dad doesn't like food mixed up like casseroles. She does eat a about 5-6 fruits and  5-6 veggies. Funny how kids will eat better around other kids at snack time then at home.  Her brother likes more flavour in his foods so he wants tomato sauce on pasta. He eats a wider range without fuss (like me).  I think if we do a garden , she will be more interested.  Funny both of them don't like applesauce. Like apples but not sauce.  Not even the Motts with different flavours. I have a neighbour with an apple tree so I could be having lots of apples for sauce but why bother if it isn't going to be eaten.   I just want both kids to learn to eat well because I am not going to cook the same limited dishes for the rest of my life lol!

    Dear Martha, My Family's Interests, Maybe if you try once to make homemade applesauce, your children might like it better than Mott's.  For there is no comparison in flavor (& maybe also in nutrients ...).  Just a suggestion.

    Does she like fruit roll-ups?  Apples made into sauce, then poured onto a dehydrator tray and made into roll-ups is something you might try her on.  Too, dried apples are a nice snack she might enjoy.  Gosh, you hate to turn down free apples!  Liz

    Thanks for the ideas! Nope! They don't like fruit rollups or leather. raisins are pushing it for them with dried fruit. Canned fruit is a no go. Homemade or not , they don't like applesauce nor apple pie. I just bought Dole's squishables at costco. pureed 100% fruit in a package,that they squish out of a tube to eat. 4.98 for 14. Thought they would be good for preschool because they don't need spoons, fit the heathly bill, and it can stay in the bag for next time if not opened.  There is peach, mixed berry, strawberry (berries in applesauce like motts). They only like the peach.   Lucky that fruit is usually reasonablycheap all year ago here!  That is why I have the milk/banana/bread run very few days. Dh will eat a banana a day.
