    Egg replacer

     In a quart jar put 1 Cup potato starch, 3/4 cup tapioca starch/flour, and 2 tsp baking powder....put on lid and shake to mix well....store in airtight container....to prepare mix for 1 egg...1 1/2 tsp mix plus 2 Tab. water...press powder firmly to measure...mix well with fork...

    Dear Suzin, How much tapioca (pearl or otherwise) do you start with to blend 3/4 c of flour?  TIA.
