    freezing peaches

    <> Our peaches are ripe. Any ideas for freezing peaches that gives a good product? We will eat a lot, can some, make jelly. I would like to freeze some but have not tried this in the past.  Thanks for the help. Babs

    Babs, you are BLESSED; surely at the Marriage Supper of the Lamb, fresh peaches will be served!  Very few things taste better!

    I have frozen lots of peaches, Babs!  Peel, core, slice into Fruit Fresh/water mixture (keeps fruit from browning),drain, pack into quart freezer bags, label and freeze.  I usually slice peaches into a Fruit Fresh/sugar mixture and let the peaches make their own juice, then pack, label, and freeze.  I freeze all of the peaches when fresh-picked in the summer, then thaw some to make jelly/preserves when sugar goes on sale and the weather is much cooler; the rest of the frozen peaches I use for cobblers, pies, and peach shortcake--my family loves peaches!  Miss Paula in Texas  Edited to Add:  I never can peaches, Babs, as they always end up too watery for my family's tastes.

    I remember someone in  a post saying that they freeze peaches in orange juice and then after you defrost the peaches you can still drink the juice.  I have a male friend who can peaches with brandy.

     OH, I had forgotten the brandied peachs. I have an old friend that use to can them just for their Christmas dinner. My DM had bad experience freezing peaches. I think that is why Im a little nervous to try it. She said they always turned dark when they thawed. Didnt matter how she did it. I wonder if it is pure OJ or part water. Babs

     Our favorite way is to peel and slice into pineapple juice.  Then freeze in baggies. If I'm feeling generous or don't have many peaches I do straight juice. If I have lots I dilute it half water and half juice. Apple juice or orange will also work.  We just really like the pineapple and we don't really have a problem with them turning brown. I crush a vitamin C tablet and add if using apple juice. The citric acid stops the brown.

     That sounds good. DD favorite fruits are peaches and pineapple. Will have to try this one.Babs

    I tease my friend because he never gave any of the brandied peaches to me!  He is a good dessert maker too but he keeps trying to make the pastry crusts healthy! To me, cheesecake with whole wheat crust is not the same. lol   He is older and has been on his own for a long time so he learned to cook lots of things.  He was my friend first and is a good friend of my dh now which is nice because they are into physics, things like gravity waves etc that are over my head so they can talk about that stuff while I eat the cheesecake!

     My DS wants us to do the peaches with Brandy. I found  dozen different ways to do it. Maybe will try it this weekend. Still researching it . Of course then DS wanted to just make Peach Brandy Babs

    Wow I am tired (allergy meds don't help either) Brandy I just read your post again and got it! funny!  Lots of times I write a post and on this laptop, hit a key and the whole thing disappearing in thin air!  my spelling is getting bad!
