Butter substitute?

    Butter substitute?

     Hi, everyone,

    I love butter, but it's gotten such bad press recently that I want to try one of the substitutes on the market. Can anyone recommend one that actually tastes as good as butter?

     I really really like I can't belive it's not butter with olive oil. It has a great buttery flavor.

    Oh tell me about it my dr. told me to lay off it geez that guy iss no fun I use country crock spread its ok but not as good as I can't believe its butter thats real good comes also in a small tub try it..

    I decided to make my own spread.  I just soften 1 stick of butter right in my stand mixer bowl.  After it's softened, I add 1/2 cup of EVOO and blend thoroughly.  I just pour it into a reusable container and stick in the fridge.  You can taste the EVOO, but it spreads easily even when fresh out of the fridge and it works as well as the blends at the store, though it looks different.  You could cut this in half to try it and see if the flavor and texture work for you.  It's also pretty cheap to make.  I have butter stocked right now that I got for $1.50/box, so 1 stick is 38 cents.  A 1/2 cup of EVOO is probably $1.
