makes 3 dozen
1/2 cup butter
1 1/4 cups sugar
2 eggs
1-1/2 cup canned pumkin
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon fground ginger
1 teaspoon lemon extract
2-1/2 cups flour
4 teaspoons Baking powder
1 cup raisins
1 cup nuts
directions:
In large bowl with electric mixter mix all the wet ingrediants and in the other bowl mix all the dry then fold in with the dry mixture of batter to all one bowl..
that means you can mix all this mess together and mix well then grease cookie sheet set oven for 400 degrees or a little less if the oven runs to hot just watch close with the timing for 13 to 15 minutes its ike any other cookie batter enjoy oh its just an option for raisins and nuts if you don't want them leave them out just make sure you chop up or dice wallnuts well then whamoo you got one big heathly nutty pumpkin cookie ...
