    Clean Out The Fridge Vegetable Soup

    This would be a good way to use up leftover plain cooked rice or the lima beans you get in the Angel Food boxes

    6 cups of assorted cooked, raw, or frozen vegetables (peas, onion, celery, carrot, lima beans, tomatoes, zucchini, squash, spinach, broccoli, etc.)

    If you use canned vegetables, drain them and rinse them with cool water first.

    2 quarts of Tomato Juice
    water as needed
    salt, pepper, and sugar to taste

    Add all ingredients to soup pot and bring to a boil. Reduce it to simmer and cook for 15-20 minutes. Check to see if the vegetables are done. If they aren't done, cook a little while longer. Season to taste.

     We love soup made with tomato juice. I like to add a little basil to flavor it. I just throw in the leftovers and some pasta. My family only likes rice in chicken soup so save the rice for that. Good with crackers or cornbread. Babs
