Chicken stew - chicken tenders (BOGO), sliced yams, carrots, onion, chicken broth, and mushroom soup, cooked in the crock pot, with a side of spaghetti squash.  The leftovers are in individual containers for lunch all week.

Yes cc, the chocolate chip pumpkin muffins are gluten-free for DH on the celiac diet.  I adapted a recipe from a gluten-free cookbook that oldest DD likes, & so far they are the best muffin recipe we have found.  Most gluten-free baked goods are dry with a "gritty" type feel in your mouth, & these are soft & springy, like regular muffins are. I am still learning how to bake with gluten-free flours, adding things like bananas, pumpkin & applesauce to improve the texture of the finished product.

Tonight we had the leftover muffins with crockpot chili.  Youngest DD came to visit, so I sent a couple meals worth of the chili back to college with her.  Heat & eat saves her time & $$, & right now both are in short supply for her.

Tonight will be spagetti  (homemade sauce totally out of my garden) and bruchetta and raw vegetables.  Apple crisp (that I still have to make) for desert.

Last night we had tacos dh had to work so dd pick what she wanted.  Which is fine sine dh does not like them anyway.  Tonight we had Chili.  Well I had Chili dh took it for supper at work the kids had noodles and cheese.  In WI we serve chili over noodles (I prefer macaroni noodles)  they also had an apple and carrots

My supper was not a balanced meal. I ate the last of the onion crackers from the local gourmet shop, frozen hash brown parries, and I sliced some of the Edwards Petite Ham.

I have mastered the art of carving the ham with paper thin slices !!!Big Smile

I am getting my money's worth out of this ham.Wink

I get the hash browns in the frozen food section at WM and they cost $1.88 for a package of 10. They are WM's store label.
