I was on my own last night, DH was doing lab work in the field. So, I had feta, walnut, and lime whole wheat pasta, with shrimp, artichoke hearts, and baby bella mushrooms. For dessert I had Scharffen-Berger homemade cocoa.

I was home alone last night, love those nights when I can just pick and choose what I want for supper!  Love to cook for others, but do enjoy the rare home alone night.  Anyway, I had a chicken salad sandwich on homemade bread, carrot sticks, fresh out of the garden tomatoes and a slice of home-made applesauce cake.

Last night we decided to go out and let the boys pick where we would eat.  They picked Red Robin, so we had burgers and fries there.  Tonight we're having baked ham, and maybe corn casserole and salad.

Wyogirl, I am right there with you! I love cooking for others, too, but some nights it's great just to have yourself to think about :-) It's so much more flexibility. My dinner last night was all from leftovers from bits and pieces over the week. It wouldn't have been enough tor more than just me, but it was so fabulous! The tomato & pepper were from the garden, both were in halves from a meal earlier in the week. The feta and mushrooms were from a different meal, and we always have walnuts in the refrigerator. The shrimp was from a purchase made in anticipation of NYE (Martin's had an amazing sale, so we stocked up now on frozen shrimp, and I bought a few extra for my weekend to myself!). Tossed it all together with EVOO, some lime & zest, and it was a meal that used up a lot of leftovers :-)

DH is going to be jealous :-)

Today we are having turkey breast (it was on a loss leader sale recently) cooked in the crockpot with potatoes & veggies.  There is one sweet potato that needs to be used up, so I will cook that for my son as well.  Tomorrow, we will have turkey noodle soup, yum!  I will be freezing any leftover meat, and we probably won't have turkey again until Thanksgiving.
