Whats your best Poor Man's recipe???

     I like raw onions, so I would do it the way it's written.

    the only onions i like raw are green onions and those sweet vidalia onions.  i'm gonna try this one though. love eggs.

    i'm really enjoying this thread. i am subscribed and i get the notices via email and look forward to not only learning new recipes, but also seeing the differences in what one person will consider a poor man's meal, vs what another person considers a poor man's meal. i dont enjoy reading someone correct another person though. if all i had to contribute was to judge, i'd just decide to not post, or unsubscribe, rather than embarrass someone.

    anyway, not sure if this qualifies as a poor man's meal, but want to share. last night i was making chili for supper and we had company come over unexpectedly. so i added two cans of beans, two cans of tomatoes, doubled spices and everything except the ground beef in the chili, and it still tasted awesome. didnt even notice really that there was less beef. was pretty good!  also whipped up some cornbread, double recipe, and put out sliced tomatoes, marinated cucumbers, and a veggie salad.  hasnt happened in a while unexpectedly, but got me thinking about how doubling everything but meat in a recipe is a great way to stretch those food dollars. am going to try this again soon with other recipes, especially now that it is soup season here in the states!

    My poor man meal is a Pork roast.  I usually make 3  meals from one 3-4 lb roast.  The first night we have cranberry pork roast in the crock pot.  The second meal is the sweet and sour pork from hillbillyhousewife.com, and the last meal I put the rest of the pork back in the crockpot with bbq sauce and we have it on a bun.

    My mom used to make rice and eggs when I was a kid. I kind of forgot about that! It was yummy. I make grits and eggs a lot for me and the kids now... but next time I have left over rice I will do rice and eggs.

     I'm going to try the rice and eggs, too.  I have never had it, but it sounds good!  Also Leasmom MIL's "cold tuna salad' sounds great to me.....why didn't I ever think of that!  Everything that I make that would be considered a poor man's recipe you all already listed!  I actually love hamburger gravy....yum...and you can substitute "chipped dried beef" for the hamburger, but sometimes that really isn't cheap.

    Thats great! I went to a restaurant once and they were serving scrambled eggs and you had a choice of grits or rice, I chose rice. I guess alot of us have that memory, hunh?  And my MIL's Cold Tuna Casserole dish is good. My daughter made it for me after her grandmother taught it to her. And the chipped beef sounds good. You could save pieces from a roast that you make, freeze it and use it when you need to make a poor man's meat gravy and toast.

     Here's my poor man's Cranberry Juice Drink. I did this as a kid, we always had a few cranberry cans leftover well after Thanksgiving. So oneday I took it and put the whole cranberries from the can into a bowl, added water, and let it sit a bit, then drained the cranberries, which could be used in breads/pancakes etc. but then you add sugar to the cranberry drink and add ice. Its good. I have done this a few times as an adult too.

    I haven't done this in years, but I used to cook an over easy egg and add it on top of a piece of meatloaf in a sandwich.  YUM!  But, i just quit making them probably because I never made meatloaf when I lived by myself for several years.

    Also, I used to heat up some mashed potatoes (sometimes making a potato patty) and add them to a bologna sandwich.

    Poor Man's French Toast-it has no eggs or milk, you take pieces of bread, cut them into two triangles, you fry them in butter on both sides, sprinkle while still hot with a cinnamon sugar mixture, serve with Syrup.

    No salad dressing...use vinegar. Its tart but works. We used to eat tomatoes and cucumbers that were tossed in vinegar with salt and pepper as a kid. I still love it.It would go great on lettuce the same way.

    Poor Man's vanilla Milk-Milk, Sugar, vanilla extract, mix and drink. My daughter loves this.
