    Cheese Pudding AKA Mock Cheese Souffle

    Cheese Pudding
    Serves 6

    Note: This can easily be doubled. It goes nicely with a salad. Save the crusts to make bread crumbs.

    6 slices white bread with crusts removed
    4 eggs
    1 3/4 cups milk
    1 teaspoon dry mustard
    1 3/4 teaspoons salt (I do not add the salt)
    1/4 teaspoon pepper
    2 cups sharp cheddar cheese

    Butter slices of bread and cut into cubes. Place in a buttered 2-quart casserole, alternating with layers of cheese. Beat together eggs, milk, salt, pepper, and mustard. Pour on top and chill one hour or longer in the fridge. Preheat oven to 350 degrees. Bake 45-60 minutes or until set.

    Note: Cover the casserole before you put it in the fridge to chill. This may chill in the fridge overnight.
