    Calico Couscous

    Calico Couscous

    2 cups dry couscous
    4 cups boiling water
    1/2 tsp garlic powder
    1/2 tsp red pepper flakes
    1 cup yellow whole-kernel corn
    1/2 cup shredded carrots
    1 cup finely diced celery
    1/2 cup finely diced green pepper
    1 cup diced and seeded Roma tomato
    1 cup cooked black beans, rinsed and drained
    1/2 cup diced red onion
    1/4 cup minced chives or green onions
    1 Tbls each, dried parsley and dried basil

    Over medium-high heat, bring the 4 cups of water to a rolling boil. Pull from heat and add the garlic powder, red pepper flakes and the dry couscous, placing lid on the pot. Let rest for 5 minutes, or until the couscous have absorbed all the water.
    Turn the couscous into a large mixing bowl, fluffing the couscous as you dump.
    Add the corn, carrots, celery, green pepper, tomato, red onion and black beans to the bowl, lightly tossing and folding. Add the chives, parsley and basil, folding and combining until all the ingredients are incorporated. Serve at room temperature or chilled

    perfect for picnics or parties.

    Im getting off the computer this is to good to drool over once again good recipie and is it kinda cheap I have to double this recipe next week for a get together at a meeting...
