Can I substitute oil for the shortening in baking mix?

    Can I substitute oil for the shortening in baking mix?

    I was looking at the Quick Mix recipe in the Make A Mix book (found it in the library) and noticed that I can substitute 1/2 of the all purpose flour with wheat flour.  I was wondering if I could also substitute oil for the shortening.   Thanks! :)

     I don't know what the Quick Mix recipe is for, but I'd say that, yes, you can substitute. When I found that I was allergic to pork and therefore, lard, and it was time to bake pies, I didn't have shortening and I won't use it. I substituted vegetable oil and the crusts came out fine. It surprised me, but I've used oil instead of shortening in several other things since and it has always worked.

    There is a recipe for quick mix that uses oil. It's in my collection of recipes put out from the Maine Extension Service. Let me know if you want the recipe.

    I can post the link for the recipes from Maine, but it'll have to be tomorrow because I'm getting ready to go to bed. The notebok is in the living room and my computer is upstairs.

    Maine has a booklet that you can print with recipes on a budget. I discovered the publications several years ago. There are recipes for different things that are easy on budgets plus there are smaller size recipes.

    Quick Mix is Make-A-Mix's version of Bisquick.

     Just google "make your own bisquick with oil" and you will get several recipes.  You can sub wheat for white but make it in smaller quantities.  It goes bad faster.

    Thanks everyone for responding.  I couldn't find much when googling, but did find a couple of links.  And I looked at the Maine site and that's exactly what I wanted. Thank you VNW! :)

    After studying different baking mix recipes, I found two that I combined the recipes into a 50/50 wheat/all purpose flour mix without any added fat.  One of the sites said to add 2 T. oil or margarine to each cup of mix used.  I made up the mix a couple of days ago and tonight I made the first batch of biscuits.  They came out as good as the bisquick heart smart biscuits. Yeah! Big Smile

    I like that I don't have to add the fat right away and can store the mix in the cupboard as our frige is so limited on space.  

    The next thing to make: pizza crust. YUM!
