What to do with ground pork?

    What to do with ground pork?

       I recently found a good sale on ground pork, so I bought a couple of pounds.   I'm seeing lots of meatball and meatloaf recipes, but was wondering if anyone had something different that they enjoyed.

     I LOVE GROUND PORK!  I make my own breakfast and Italian sausage from pork and buy seasonings right from the meat department.  We make burgers, etc.  If you can do it with hamburger you can do it with ground pork.  If ground pork isn't on sale you can have cheap roasts ground.  You can find out more about ground pork at www.all-about-meat.com.  Ask them for their rice and sausage casserole YUM!

    We love ground pork! Here's what we do:

    Oink burgers: Make hamburgers just like you would with ground beef. Very good grilled with BBQ sauce.

    Hunter's Chili: Add a pound to 3 lbs of venison. Venison is very low fat and the ground pork balances it out.

    Oink Chili: Same as beef, except with pork.

    Burritos cerdo: Season as you would with ground beef. Extra yummy!

    I think most ground beef recipes are usable. Have fun!

     I have to add another vote for breakfast sausages. Ground pork and ground turkey both are good for this.

     This is a favorite at our house:

     

    Chayote Casserole with Ground Pork
    Chayotes are related to squash and are indigenous to Mexico. Here the chayote is baked in a creamy sauce with ground pork for a light main dish.

       2 medium chayote squash, quartered lengthwise
       1 tablespoon olive oil
       1/2 pound lean ground pork
       1/2 medium white onion, coarsely chopped
       1/2 red bell pepper, coarsely chopped
       1/2 teaspoon dried thyme
       1/2 teaspoon salt, or to taste
       1/8 teaspoon freshly ground pepper, or to taste
       1/2 cup heavy cream
       1 tablespoon bread crumbs
       1/2 cup shredded manchego or mild cheddar cheese

     

    1. In a large pan of salted boiling water, cook the chayotes over medium heat until tender, about 25 minutes. Drain and cool under running water. Peel off the thin skin and slice crosswise. Reserve in a bowl.

    2. Preheat oven to 350°. Grease an ovenproof casserole dish. Heat the oil in a skillet and cook the ground pork until no longer pink. Add the onion and red pepper. Cook, stirring, until tender, about 5 minutes. Add the reserved chayote and the remaining ingredients, except the cheese. Stir to mix. Bring to a boil and cook for 1 minute.

    3. Transfer the vegetables to the casserole dish. Sprinkle the cheese on top. Bake until completely heated through and the cheese is melted, about 20 minutes. Serve hot.

    I always use ground pork in my meatloaf.  1/2 beef 1/2 pork. or I get a meatloaf mix from a local store that is pork, beef, veal. Sometimes I add hot chorzio sausage.  Basic recipe, liptons onion soup mix, about 1/2 cup or more ketchup, worechester ? can't spell it sauce?, a egg, and some dry bread crumbs for binding. Depends how big of a loaf I am making. also makes good meatballs.  We like meatloaf better this way. All beef meatloaf tastes like a big hamburger to me.  We eat enough of those :)

    I always buy ground pork to make my own italian sausage, sometiimes breakfast too. I use the recipe from "Dining on a Dime" and tweek to our liking. I will never buy bulk italian or breakfast again, because the flavor is so much better.

    Chayote squash?  So that's what those things are and what you do with them! Ya learn something every day!

        I shall have to visit the international market here to see if they have them at a good price.  (Though I see from my research that summer squash would work as well.)

      Folks, thanks very much for you help .. you've given me some options. (though I may wait a bit to make any chili .. just doesn't sound good in 95-degree weather)
