½ cup coconut oil
½ cup honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
5 cups rolled oats - not quick cooking
1 cup coconut

Melt oil in crock pot then stir in other ingredients in order. Cook on low for 5 hours or until brown, stirring occasionally. Make sure you keep the cover cracked on the crock-pot. The more frequently you stir, the finer the consistency. If you prefer clumpier granola stir less.

Options:

Add raisins
Dried fruit
Nuts
Chocolate chips
...whatever you desire
Good as a hot or cold cereal, as a snack, a topping for yogurt or made into granola bars, see below.

2 eggs, beaten
2 cups Crockpot granola (see above)
½ cup of optional ingredients

I think it would be very kid friendly! A familiar dish with exotic flavors :-) And so yummy! I also added recipes for companion dishes.

Dinner menu: "Fried" Chicken Curry with cucumber/tomato salad, hummus, and flat bread.

OR

"Fried" Chicken Curry with Crispy Sweet Potato Chips & a fruit or veggie salad.

"Fried" Chicken Curry

2 tablespoons curry powder

1 tablespoon chili powder

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon poultry seasoning

1 teaspoon celery seed or ground cardamom

1 chicken, cut into 8 pieces or 4 large skinless, boneless chicken breasts (cut into manageable strips) or 8-10 thighs

Salt and pepper

1 cup whole-fat plain yogurt (I used fat-free greek-- I think the main point is that it is thick yogurt)

1 cup flour (may need a little extra)

Some of the more exotic seasonings are expensive, but purchasing them will open up a whole to world of cooking to you. These spices are used in Indian, African, and all Middle Eastern styles of cooking.

1. Blend spices, Mix 1/2 of the spices with yogurt in gallon size bag or bowl. Coat the chicken pieces in marinade well and set for 30min-24hrs.

2. Preheat oven to 350. Mix other 1/2 of spices with the flour in a gallon size baggie. Drop in all chicken pieces (do not rinse off marinade) & shake until well coated.

3. Arrange chicken on a pan that has been sprayed well with non-stick spray. Once chicken pieces are in place, spray them with non-stick spray as well. This will help them get brown & crispy. Bake for 20-25min (flipping midway through) until internal temp of pieces registers 160 degreesF on a meat thermometer.

Cucumber Salad

2-3 Cucumbers sliced into medallions then halved
Mayo & red wine vinegar
Sea Salt & Cracked Pepper
Add a pinch of cumin to tie flavors into main dish

Mix mayo with red wine or balsamic vinegar into bowl of cucumbers until desired taste & consistency is acheived.

Cucumber & Tomato Salad

I buy my hummus at wal-mart, but you can make it.

Roti is an inexpensive quick flat bread to make. Use it to make a chicken-hummus "taco" or break pieces of it off & dip into the hummus.

Sweet Potato Chips

3med sweet potatoes, cleaned well, sliced thin w/ mandolin slicer

Non-stick spray

S & P

Paprika

Parmesan

Preheat oven to 425. Spray pan down well with non-stick spray. Arrange potato slices evenly on pan, spray with non-stick spray again. Season with S&P and paprika. Bake for 25-30min until brown & crispy. Sprinkle with parmesan. Can be cooked ahead of time & served at room temp or reheated in oven while chicken is cooking.

Beef Friend Rice - frugal recipe

Beef Fried Rice

3 eggs
Dash pepper
3 tablespoons vegetable oil
1 pound ground beef, cooked and drained
2 cups cooked long-grain rice
2 small onions, chopped
3 tablespoons soy sauce
1 teaspoon sugar

In a bowl, beat eggs and pepper.
1 tablespoon of cocoa

pinch of salt

1 stick of butter

1/2 cup of castor sugar ***

**** Castor sugar is the name of a very fine sugar in Britain, so named because the grains are small enough to fit though a sugar "caster" or sprinkler. It is sold as "superfine" sugar in the United States.

Because of its fineness, it dissolves more quickly than regular white sugar.

If you don’t have any castor sugar on hand, you can make your own by grinding granulated sugar for a couple of minutes in a food procesor (this also produces sugar dust, so let it settle for a few moments before opening the food processor

Jack O'Lanter Stew

Jack O'Lanter Stew

1 (9 to 12-inch) pumpkin

1 large onion, chopped

1 green pepper, cored, seeded, and diced

1 red pepper, cored, seeded, and diced

4 carrots, thinly sliced into rounds

3 celery sticks, thinly sliced

2 cloves garlic, crushed

1 pound lean ground beef

1 pound ground chicken or turkey

2 cups cooked rice (instant is okay)

1 large can diced tomatoes

1 large can tomato soup

Preheat the oven to 350

Cut the top off the pumpkin and scoop out the insides. Rinse well. Oil outside of pumpkin. Bake the pumpkin shell for 30 minutes.

While shell is baking: saute the onion, green and red peppers, carrots, celery, and garlic until the vegetables begin to soften, about 8 minutes. Remove from pan and set aside. Brown ground beef and chicken. Add the veggies and cooked rice and cook over low heat, stirring often, for 10 to 15 minutes to let the flavors meld.

Remove pumpkin from oven and let stand 15 minutes. Stir the tomatoes and soup into the meat mixture. Place meat mixture into pumpkin. Put back in oven for 20 minutes.
