    Cabbage Help

    Does anyone have any good cabbage recipes that may or may not include meat?  I was remembering a recipe for cabbage rolls (with ground beef and rice)????  Anyone have that recipe??  Any help would be great!

    On the Better Homes & Gardens site, on recipes, there is a slow cooker (Crock Pot) recipe for Sweet & Sour Cabbage Rolls that is vegetarian & it is good.  I am sorry that I don't have a meat version.

    I will try to find the recipe I had for cabbage roll casserole--very easy tasty--basically chopped cabbage, cooked ground beef, onion, rice, diced tomatos and seasoning--put in greased dish, top with a small amount of grated cheddar or similar and baked quite a while in a low oven--300 degrees?  It was really tasty.

     I slice my cabbage and boil it a bit, just till it is limp.  Then I fry off a 1/2 pound of breakfast sausage and drain well, mix the two together and pour into a greased casserole dish.  Then I layer sliced potatoes over the top and cover.  Bake at 350 degrees F for about an hour, then remove the cover and continue baking until the potatoes are tender.  I have also tossed in a chopped onion or chopped leeks, some garlic, shredded carrot, diced celery, etc.  I call this Mock Colcannon!  ; )

    I also put it in the crockpot for about 6 hours on low or until the potatoes are tender.

    We also like braised cabbage.  I slice it thin, and layer it in a pan of 1/4 cup water and 1 stick of butter. Turn the flame on low and let it go until crisp tender.  You can also add onion, shredded carrot or leeks to this.  If there are any leftovers I use it to make a nice fresh tomato soup.

     One of our family favorites is corned beef and cabbage sandwiches.  We usually stock up on corned beef for St. Patrick's Day- John keeps a watch for leakers which we can buy at a discount.  We boil up the corned beef  until tender.  Then after we take out the meat we boil the cabbage in the same water until it's cooked thru. We make the sandwiches with rye or pumpernickle bread  a little mayo, mustard, swiss cheese, the drained cooked cabbage and sliced meat. Yum! we've had the kid's friends visiting and when they first saw what we were eating they were skeptical but once they tasted it they chowed right down like the rest of the family. 

     You could also add cabbage to your stirfries or make a coleslaw.  If you've got an overbundance in the garden try making sauerkraut.

    instead of stuffing the cabbage, I make "almost stuffed cabbage" in my rice cooker, if you don't have a rice cooker,there are lots of similar recipes online.

         •    Almost Stuffed Cabbage
    2 c Shredded cabbage
    1 c Uncooked white rice
    1/2 c Water
    1 md Onion chopped
    1 md Bell pepper; chopped
    16 oz Can whole tomatoes; drained and chopped
    1 lb Lean ground beef; (uncooked)
    1/2 lb Sausage; uncooked/sliced thin
     
        •    Combine all ingredients in an electric rice cooker. Set on "cook" setting. When cooker switches to "warm" setting, stir and allow to sit covered for 10 minutes.

    Yummy thanks moonblaze!  Thanks to you alnd everyone else, I now have MANY wasy to cook this cabbage!

    My Mom had this one that she gave to me if anyone is interested....

     

    BEEF-STUFFED CABBAGE ROLLS

     

    1 pound ground beef                        Sauce:

    1/3 cup uncooked regular rice            1 medium onion, thinly sliced

    1 egg, beaten                                    2 tbs. butter or margarine,

    1/2 tsp. salt                                      melted

    1/8 tsp. salt                                     1 10 3/4 oz. can tomato soup undiluted

    6 large cabbage leaves                   1 1/4 cups water

                                                        1/2 cup chopped celery

                                                        1 tsp. lemon juice

                                                        1 tsp. sugar

                                                        1 tsp. salt

                                                        1/8 tsp. pepper

     

                Combine ground beef, rice, egg, salt and pepper; blend well.

                Cook cabbage leaves in boiling salted water for 5 to 8 minutes until just tender; drain.  Place equal portions of meat mixture in center of each cabbage leaf;

               fold ends over, and fasten with wooden picks.

                Sauté onion in butter in a large skillet until tender but not brown.  Add tomato soup and remaining ingredients; stir well.

                Place cabbages rolls in tomato mixture, cover and simmer 1 1/2 hours

                Yields 6 servings.

     3 lbs!  I guess I think big like 100 lbs.   Last year I was already to freeze corn and John showed up with 5 cases of pork roasts.  So much for freezing corn :) I just never know what he'll find.

    Well, it's only 3 pounds for a few reasons....

    1) I don't have the space for very much.  I live in a backhouse!

    2) It's just my boyfriend and I, and our fridge/freezer is very small, with NO room in site for another freezer.

    3) I don't have a garden with access to that much cabbabe (I wish!) :)
