    Jumbo Breakfast Cookies

     Jumbo Breakfast Cookies

    These have turned out to be the best cookies I have had in a long time. They are easy to make, the dough freezes well as do the baked cookies, and they are going to be great for shipping. Eating too! They will take just about any leftover baking item you have a little of and still turn out fabulous. Hubby says they will now take the place of his morning muffin, why not they have just about the same ingredients.

    1 1/4 cups sugar
    1/2 cup butter or margarine softened
    1/2 cup peanut butter
    1/4 cup water
    1 tablespoon vanilla
    1 large egg
    1 1/2 cups whole wheat flour
    1 cup old fashioned or quick oats
    1 cup raisins
    1 cup coconut
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    4 cups Cheerios cereal

    Directions

    Heat oven to 375 degrees F. Stir together sugar, butter, peanut butter, water, vanilla and egg in a very large bowl. Stir in remaining ingredients except cereal. Gently stir in cereal.

    Drop dough by rounded 1/3 cupfuls 4" apart onto ungreased large cookie sheets. Flatten dough to about 1" thick.

    Bake 13-15 minutes or until golden brown. Let stand 5 minutes before removing from cookie sheet. Store loosely covered.

    NOTE: I doubled the recipe and used an ice cream scoop for the cookies. They took a full 15 minutes in a convection oven. I also added 1 cup corn flakes, 1 cup of chopped peanuts, and 1/4 cup cookie crumbs, and used white flour. I got 40 cookies a little larger than a standard sized baking powder biscuit, they are about 1" thick. They are delish!

     My DH is on Weight Watchers    :o(           ............wouldn't dare tempt him, but this recipe makes my mouth water and my tummy growl!

    This is very close to one of my favorite cookie recipes, except I've never added cheerios.  My favorite addition is butterscotch chips or a combo of chocolate and buttterscotch chips and leave out the raisins.  Not so good for breakfast but I have a breakfast bar I make then and add a variety of nuts and dried fruits, depending on which kid I"m caterering to and what's the cheapest stuff available at the time.  I'll probably try these next week( this week's treat quota is maxed out) & use  rice crispies in half the batch and half the batch as listed above.

    The last batch is in the oven even as I write.  I had to tell you that they rate DHs highest approval rating!!!!  He likes them baked, and he likes the dough raw.  Had to beat him off with a stick.  I did substitute according to what I had on hand....I used mostly white flour with about  1/2-3/4 cup of wheat bran, used brown sugar instead of white, and super chunky PB, no coconut.  DHs suggestion:  add trail mix.  He thinks this would make a hunting-trip-snack.  He and some of his kids go elk hunting for two weeks every fall, and take along stuff that can be carried in back packs for munching or even meals when necessary.  Just wanted you to know....

     I think that is terrific!  I lov ethis recipe because it is so forgiving.  I can bake all month long and at the end of the month make these out of the bits and bobs left here and there and as you did get rave reviews.  I send these for morning potlucks at hubby's office and they are requested over and over again.   I never thought about adding trail mix, although I do add many different dried fruits.  I bought a few cans of minced peanuts(8/10 cents each) they sell in the ice cream section to sprinkle with, and have been holding on to them trying to find a good recipe I can use to roll say a cookie in.  Got any ideas, hubby hates pb cookies of any kind, but loves peanuts in his cookies.  I just cant see putting them INTO the recipe.

    Did you see my post about Almond Sugar Cookies?  I'm certain that you could make it with peanuts instead of hte almonds, just be sure to grind them in the blender or somehow.

    I have a recipe for a plain sugar cookie that has cream of tartar and powdered sugar instead of granulated.  It is for a cut out cookie, but I often just roll the dough as for refrigerator cookies and either cut off and bake, or freeze the rolls. It would be an EXCELLENT cookie to roll in minced peanuts, especially before freezing the rolls.  I have used chopped pecans in the past with good luck.  It is a wonderful cookie, doesn't have that heavy floury taste that so many sugar cookies have...its the only sugar cookie I make.  I cut the recipe out of a newspaper many years ago.  DH loves cookies, cake, pie, anything sweet so I try to keep something on hand for him and hide from DD#2 who has always had a sweet tooth and can't due to her diabetes.
    At the price you paid, I would think they would be good IN the recipe too, maybe frosted after baking????

    Do you have any good recipes using walnuts?  I overextended myself with BIG bags of walnuts at Costco over the last 2-3 years and now have a surplus sitting in the freezer.  Couldn't resist the price, for 4 lb. was the same price as a pound at my local grocery.

     Patrink, I wouldn't mind having this one also, I could drizzle chocolate over it and put maybe a cherry extract into it and make a "Sunday Cookie"!  lol  I know the price was excellent and I would have bought more had they had them, as it was a lady was upset with me as I scooped them all into my cart!  Devil

    I am the same way with pecans, I have about 12 pounds shelled and 5 pounds shelled in my freezer.  The shelled ones we are shipping to my dear friend in Michigan.  She sits at night and shells them then gives each of her 3 adult kids 2 pounds each at Christmas.  I think we paid $1 pound for shelled in South Carolina, and will pick up more if we find them at that price.  I will can about 10 pounds of the shelled. 

    Hey I am sure I married the human sweet tooth!  This guy can eat some sweets....  lol
