    Grandmother's Peppermint cookies

    Grandmother's Peppermint Cookies

    1 1/4 c crushed peppermints
    1 1/3 c sugar, divided
    3/4 c butter
    2 eggs
    1 tsp peppermint extract
    3/4 tsp vanilla
    2 1/2 c flour
    1/4 tsp salt

    Grind peppermint candies in 1/3 c. sugar until powdery with a few larger chunks of candies. This is best done with a food processor. Mix flour and salt in a small bowl. Mix butter, eggs, and remaining
    1 c. sugar together in a separate, larger bowl. Add vanilla and peppermint extracts.

    Add flour mixture in 3 parts to sugar mixture until well mixed. Form dough into small balls, about an inch or so wide. Roll the balls of dough in the crushed candy mixture and place on an ungreased baking sheet. Bake for 8 minutes in an oven preheated to 350 .

    remove cookies from oven and let cool on baking sheet for 1 minute, then remove them and roll them in the mixture once more before placing them on a sheet of wax paper to cool.
