What have you put up for winter (from your garden, etc.)?

    Wow, daylily!  Those seem like huge amounts, though maybe not.  How many people in your family & how long will this last for you?

    There are 4 of us, all adults, plus we give stuff to my Mom. We lost my Dad this May so we are trying to help her all we can.

    Since I don't have a freezer other than my fridge freezer, the amount just seemed high.  When you are doing for many adults, and think about it per person, it brings it down to size, so to speak. 

    My sympathy for your loss. 

    Some of the Forumites just boggle my mind with all that they put up.  Is there life outside of canning and freezing produce in the summertime?  Smile

    Does everyone continue canning throughout the winter too?

    I been canning like every year

    I canned  10 cases of strawberries

    I canned  5 cases of blueberries

    I made 10 cases of Jam, Jello and preserves

    I canned 144 cans of green beans

    I canned 120 cans of spagetti sauce , tomatoes , and soup

    I canned 86 cans of soup vegetable, chicken , base.

    I canned sweet potatoes . 4 cases

    I canned sweet potatoe pie mix

    frozen lots of squash , zucchinni, and yellow

    I froze Muffins bread ,and grated zuchinni,

    I made two cases of grape jelly

    I made 4 cases  of strawberry jelly

    and 4 cases of Mixed berry Jam

    I canned peppers ..

    I canned onions

    froze and dehydrated a lot of herbs

    I froze lots of beets

    I canned cabbage

    I have lots of squash that will be coming soon

    and

    we have package 58 gallons of Honey .

    I am sure I forget some thing

    I can anything  we have canned chicken turkey . last week we ate the last of last years apples  they be ready next month if the weather( rains from hurricanes) dont get them

    Oh yes I made 4 cases of crab apple jelly 

    I can butter .

    am waiting for the pumpkins

    wow Gayla!  I think if there was an award for canning you might win it!  How many do you feed with all that food?

    I am canning christmas pudding to be given as gifts this year to all coworkers. Its easy to make with garden excess but takes three hours to can.

    Other than that the only thing worth putting up this year is beets, pickled, relish, harvard etc.

    Very poor year for gardens in our area.

    I don't have a garden - haven't found a good spot for it yet (backyard is full of black walnut trees, which apparently are bad for growing food). But I've made some trips to local farmer's market and growers:

    • June we made several pints of strawberry jam and syrup.
    • Two weeks ago a friend and I made several pints of really hot salsa (not sure what I'm going to do with my share since DH doesn't really eat salsa).  We even had jalapeno peppers left over - since I already had gloves on, I chopped them up and they're in the freezer.
    • Later I put up 15 pints of tomato sauce (plain).  We bought 2 dozen ears of corn which were blanched, cut off the cob and frozen.
    • Last Wed DH and I made 14 quarts of peaches, 13 pints of pears and 1 pint of mixed fruit (didn't have enough of each).
    • Today we went and picked almost a full ice cream pail full of raspberries - for free! (friend is out of town and said we could pick while they were gone).  Those are freezing on sheets now and I'll probably just have some in bags and make some into jam.
    • I still have some zucchini I need to freeze - friend and I split a box we got at the end of farmer's market one day; the woman offered the whole box of them for $3!  (probably 50 little ones).

    We missed out on picking black raspberries this year - always seems to many mosquitos and deer flies when it's time to pick - plus since they're wild, the weeds have grown up by that time. Also skipped out on picking gooseberries - I did that one year and it seems a royal pain to "clean" them of their stems.

    I'm still planning on making applesauce in a couple weeks.

    I've been reading some posts about cold weater gardening.  Since we mainly use our kitchen/banquet table for storing papers, maybe I should convert that to a mini-garden area (in pots) Smile

    Christmas pudding

    Mix in a bowl

    5 cups grated raw carrots

    5 cups grated raw potatoes

    In a seperate bowl mix well

    5 cups flour

    5 tsp baking soda

    5 tsp cinnamon

    2 tsp salt

    2 1/2 cups sugar

    5 cups raisins 

    Mix veggies and dry goods together

    Sterilize the jars

    Using 1/2 pound of margarine, butter the inside of 7 quart sealers (wide mouths are easier)

    Fill 1/2 full with batter

    Put lids on

    Can for three hours

    This is best served warm with caramel sauce a little goes a long way as it is very rich.
