Matzoh Lasagna

    Matzoh Lasagna

    I saw a jewish cooking show last month that had matzoh lasagna on it. I'm not jewish but it looked good. I asked my local grocery store if they had any Matzo/Matzoh/Matzah (not sure which is correct, recipes that call for it use one of the last 2, but the box says the first) and they ordered some in. I bought it today and made it and it tasted great. I couldn't tell there was no pasta in the lasagna. I do have a question though, although it's rather silly. Is Matzo a bread? or a cracker?

    Dear Kate, I'm very pleased to hear of your new cooking inerest.

    Since the word isin Hebrew, you can spell it in English however you like.

    Matzoh is considered to be an unleavened bread.  The Bible states that, in their haste to leave Egypt the land of slavery, the Hebrews had no time to add yeast  & rise their bread.  We Jews observe the festival of Passover/Pesach to commemorate this & related event.  BTW, if you're interested in cooking with matzoh, try using small pieces ("matzoh farfel") in a "kugel," sweet pudding like apple, raisin, prunes, & cinnamon or savory, like Jerusalem (black)pepper kugel.  Kugels are simply delicous.  Also, you can make "matzo brie" (with regular matzoh, not the farfel), which is essentially scrambled eggs with matzoh pieces, but the whole tastes far more delicious than teh sum of its parts.

    Dear Gigi, Have you ever found the Mediteranean matzos?  Sun-dried tomato & basil, mmmh mmmh good!  (They aren't Kosher for Passover, but excellent year-round.)  Or TAM crackers, a kind of matzoh (TAM is Hebrew for tasty.)  Yours in Him, Deb

    The only one I could find, and the store stocked it especially since I asked for matzo bread, was thin tea matzos (Namischewitz). I don't know how many different kinds of this there are. (I've just seen the list of what other flavors are on the back of the box and although Apple Cimmamon sounds good, I wonder just what's in "Everything" flavor! lol) The lasagna tasted fabulous and my kids just loved it! I've never made a meatless lasagna before but this turned out well.

     Here is the link to the recipe I used. I added an egg to the cottage cheese and left out the pepper which is optional. I used Ragu Parmesen and Romano tomato sauce and Sundried tomato and basil mozarella cheese.

    Dear Kate, I believe the Tam crackers are a product of Manischewitz.  I cannot recall for certain which company makes the Meditteranean matzos, but I think that it is Streit.

    "Everything" matzos are like "everything" bagels:  onion, garlic, sesame seeds, & poppy seeds.
