Saving eggs

    Inflation fighter [IF] Saving eggs

    I'm new to this forum and still finding my way around, so I'm sorry if this question has been answered before.

    I live alone and find that my eggs usually go bad before I have a chance to use them up.  (I rarely have time to bake at just the right time.)  I wondered if anyone had a method for saving them so that they're ready to use for baking, etc. when I need them.  I'm considering cracking them into a container, whipping them, and then freezing them--possibly in ice cube trays like broth.

    Has anyone ever tried this?  I've never frozen raw eggs before.  Does it do something strange to them?

    I really appreciate any help you can give me!

     Mimi, first let me welcome you to the forum. And say we hope to see you more.  : )

    Eggs are easily frozen for later use, either seperated into whites and yolks or together.  And freezing them in ice cube trays is perfect!  : )  If you seperate them(whites and yolks)you whip with a fork and add a sprinkling of salt(sugar if you know you are going to use them for baking), pour them into the ice cube trays and freeze.  After 24 hours pop them out and put them all into a container or ziplock bag.  If you are going to use them for say, scrambled eggs, you can whip them whole with a fork adding a sprinkling of salt and measure them into freezer containers or bags(say 2 or 3 eggs), freeze solid.  To use just that them in the refrigerator and they are ready to go.

     Question, is there a reason to add the salt? Is it necessary? I froze eggs many years ago and dont remember what I did. They are on sale this week for $1.58 so good time to stock up. Babs

     babs ~ I know the salt is used to help preserve the eggs while frozen.  I am sure it is NOT necessary, just the way I was taught to do it.  : )

     Michelle, I did finally look it up in Putting Food By. I tsaid that the salt helps keep the yolks from getting hard. No idea how that works. Babs

    Welcome Mimi!

    I have a question on freezing in ice cube trays - do the frozen eggs pop out clean?  (Sometimes ice cubes pop out perfect, sometimes not.)

     Yes they do, I use both plastci ice cube trays and aluminum ones with the lift lever.  You can spray each tray lightly(over the sink)with vegetable spray, wont hurt the end product a bit and will help them pop out each time with no problem.  : )
