    Lots of green peppers

     I have about 12 green peppers, was going to make relish, but we don't use it much.  (We're vegetarians.)  Any other uses you can think of?  I might just chop and freeze.

    personally I don't like green peppers but stuffed peppers seems to be a popular item. You can stuff them with rice instead of hamburger.   Or a nice greek salad. or roasted.  quesadillas with cheese and peppers.    I normally only buy orange/yellow/red peppers discounted and cut them up for the freezer.   Since I use them for fajitas etc that is not a help for you!

    I googled and there is lots of green pepper recipes I never thought of.....green pepper rings seasoned and fried, stuffed peppers with corn

     When I have an abundance of green peppers, I use them or cook them like fried onion rings.  You must cut them about 3/4" thick and rest them in ice cold water.  Immediately before dipping them into your favorite breading lay them on paper towels to dry and dust them with a bit of flour.  We like to add a bit of cayenne pepper, or Cajun spice mix to the flour mix...yummy!

    Green pepper soup is delish also:

     

    Green Pepper Soup

    I cook this both on the stove and  in my crock pot, either way it is delicious.   I serve this with a nice crusty bread and lots of fresh cracked black pepper.  Feel free to add any herbs or spices of your choice, fresh dill is always a nice addition as is basil.  I have also added the flavored 15 ounce cans ot tomatoes(chili, Italian, etc.)with wonderful results.


    1 lg onion chopped
    5 – 7 green peppers, chopped

    Brown the above ingredients and drain well. Now add:

    6 cans of Tomato Soup and 5 soup cans of water(You can add 1 46 ounce can of V8 or Tomato Juice in place of the soup)
    1 can of vegetable broth & 1 broth can of water(1 can = 2 cups of broth)
    2 tsp of Brown Sugar
    2 small cans of Tomato Sauce
    3/4 cup of uncooked white rice

    Simmer on low until the rice is cooked. You may eventually want to add about another cup or so of water, if the soup gets too thick.
    (I've doubled this recipe and frozen a portion of it. When I go to use the frozen batch, I added a can of vegetable broth and another can of tomato soup. It just seemed that after it was frozen it was really thick!)

    I can't eat them without being cooked. I would taste them all day long. Not good. So, they are never eaten fresh here, but when I do have an abundance of green peppers I chop them up and freeze. Sometimes I slice them and saute with onions to put over a cheese burger or better yet, a garden burger (yummy this way).

    I never thought of making them like onion rings. That sounds interesting.

    I chop and freeze my extra green peppers in the snack size bags and that is the right size for my family to add to meals as it is cooking.
