I'm looking for a source of unsweetened, unflavored Kojel kosher gelatin by the pound.I have one source (www.somethingbetternaturalfoods.com) where I can get it for $11.50 per pound plus 20% fee charged by the co-op I belong to. I am hoping to find it somewhere less expensive. I can only find the 3 oz packages online. any ideas greatly appreciated! Thanks, daylily

I wish that I could help you, DayLily, but I can only find the 3 oz packages of KoJel (in stores). $11.50 for a pound sounds quite reasonable to me, even with the 20% fee added Yours in Him, Deb

Thanks Deb. I guess that's my best coice, for now. A friend told me that Kojel doesnt jell as well as Emes did and that you have to use more of it. A pound isnt very much!

I never heard of Emes gelatin. The directions for using kosher gelatin are extremely different from those for Jell-O or Royal gelatin. (Similarly, the directions for using kosher bouillon cubes are extreemly different from others.) Both require all the water to be boiling. What do you plan to make with the Ko-Jel? Yours in Him, Deb

Emes was a vegan "gelatin" made from vegetable sources, supposedly. However, the company went out of business when it was discovered that they did use animal products, even though the label said "no animal products". It seems that gelatin, when it is processed is no longer, technically, considered an animal product. Kojel is not supposed to have any animal products at all. I used to get the unflavored, unsweetened Emes in 5 lb bags from the co-op. I used it to make vegan "cheese" that could be sliced or grated, in tofu "cheesecake", fruit gelatin-type desserts with fruit juices instead of sugar, etc. I miss it! One of these days, I will break down and buy the Kojel, I guess:) daylily

Dear Daylily:
I have no clue where you live, so I can't recommend specific institution 'food brokers' in your area, who may also sell single items to consumers. In eastern MA we have Cirelli's, Perkins, and a few other places that either carry this stuff in their 'retail' store(s), or will special order it for you.
Have you contacted the manufacturer to find out who buys their 'institutional' (aka 'bulk') products in your area? That would be my first move. You can bet that any 'institutional' (commercial) kitchen (kosher caterers, assisted living, nursing homes, etc.) aren't buying cases of 3 oz. boxes! Their contact information is listed below.
I just asked 'Mr. Miserly' (who is in the closeout business and also used to be in the used commercial food preparation equipment business) if he knew the size of institutional gelatin packages, and he didn't, but he said that cake mix comes in 5 lb. bags, and I'll bet that gelatin is probably similar. So, if you can use 5 lbs. (It takes quite a while to 'go bad' - we have some that 'won't gel' any more, but it's been around for 'quite a while' and I think it spent too much time in the garage, also), then that would probably be your best bet.

I just want to comment, DayLily, that Kosher gelatin meets the 1-in-60 test. If meat ingredients are discovered to have been transmuted eough to be 1/60th or less of ther final product, it meets the test for being pareve (neither meat nor milk). In the case of Kosher gelatin, I am fairly certain that it is made from microbial ingredients -- like the vegan type. Yours in Him, Deb
