They buy bulk lots of slightly damaged, discontinued, seasonal & sometimes out-of-date items. In a regular grocery if a box of say, soups, is broke open during transport the store will not accept that item... the whole box is considered damaged. Or if one jar of something in a box, like jelly, is broken the store rejects the whole case. These are the types of things that the salvage store buys. Or if a store is removing a particular brand/item & is no longer going to carry it they often sell it to salvage. They DO sometimes have out-of-date items so you have to watch your dates but many things are still okay beyond the date on the package. You just have to be a savvy shopper.
