    Little cherry cheesecakes

    Here's a recipe for mini cheesecakes. yummy.

    24 vanilla wafers or chocolate cookies

    1 pound cream cheese at room temperature

    3/4 cup of sugar

    1 tsp vanilla extract

    2 eggs

    1 can(20 oz) cherry pie filling

    Preheat oven to 350 degrees. Line 24 muffin cups with paper liners and place a wafer or cookie in the bottom of each. In a medium bowl beat the cream cheese, sugar, vanillla and eggs until smooth. Fill each muffin cup 3/4 full with the mixture. Bake for 15 minutes, remove from oven and let cool for 30 minutes. You can then wrap the cheesecakes and freeze them for up to 1 month. Defrost before topping.

    Place a spoonful of cherry pie filling on top and refrigerate until ready to serve. Enjoy!
