I have been really bad and not doing bulk cooking and am paying for it now --- nothing in the freezer but frozen meat and veggies!!  This weekend I am going to make a large pot of veggie soup using up some of the frozen veggies with the one paakage left of already browned ground beef, I will also make spaghetti sauce (usually for 4 meals) with meatballs and sausage -- I have to remember to put some of the spaghetti sauce on the soup, I use it in addition to the canned tomatoes and it gives it more richness. My family loves arroz con pollo and maybe I will get some boneless chicken and cut it up with onions, peppers, fresh tomatoes and white cooking wine and chicken broth and once it is cooked I will put on zip lock bags, this will give me at least three meals since when defrosted all I need to do is throw long grain rice and that bulks up the meal without breaking the budget.

Now all I need is the energy to do all this in a day!!!
