    apple granola loaf

    1 1/4 cup flour

    1 teaspoon baking soda

    1 teaspoon cinnamon

    1/2 teaspoon salt

    1 cup granola

    1 cup diced  apple

    Mix the above ingredients in a large bowl 

    2/3 cup Maple syrup  ( I dont use the good stuff for this I use a mock  Maple syrup )

     1 egg

    1 cup applesauce

    1/2 cup ( 1 stick ) melted butter

    Mix these ingredients in a separate bowl

    fold wet into dry ingredients  place in a loaf pan  top with Nutty topping ( below))  and bake at 350 for 1 hour .

    nutty topping

    combine :

    1 cup granola

    2 Tablespoon melted butter

    2 Tablespoon Maple syrup

    4  Tablespoon  sugar

    you find yourself out of maple syrup, try this easy substitute made with granulated and brown sugars. Serve maple syrup substitute warm over pancakes, waffles, and biscuits.

    1/2 cup granulated sugar

    1 cup brown sugar, firmly packed

    1 cup boiling water

    1 teaspoon butter

    1 teaspoon maple extract or vanilla extract

    Place granulated sugar in a heavy skillet. Heat until the sugar melts and turns brown.

    Meanwhile, place brown sugar into a heavy saucepan. Pour water over brown sugar and bring to a boil without stirring.

    Add caramelized white sugar to the melted brown sugar in the saucepan. Simmer, stirring often, until syrup is thickened.

    Remove from heat, and whisk in butter and maple or vanillaextract.

    Serve maple syrup substitute warm over pancakes, waffles, and biscuits.

    Yield: about 1 cup

    Mock Maple syrup

    1 cup brown sugar

    1 teaspoon butter

    1 cup boiling water

    1/2 teaspoon vanilla

    1/2 cup sugar (ie: white sugar)

    Combine brown sugar and water and bring to a boil.

    Caramelize white sugar by heating it in a frying pan until sugar melts and turns brown.

    Add brown sugar syrup from step 1; simmer until smooth and thick.

    Pour into a pitcher containing butter and vanilla

     Hi Gayla,

         When I was young, my Mom made it the first way that you posted.  It tasted really great, but I remember it to be a little thinner than commercial syrup, but not overly so.....My Dad worked midnight shift on a once every three week rotation, and LOVED having "breakfast for supper".  But my Mom had a hard and fast rule that she only went grocery shopping every two weeks no matter what!!!  So hence, when we ran out, it was home made.

         But I have a question.  When she made it, she never, ever "saved" it.  If we didn't use it all, she threw it out.  Does it keep?????  Or did she throw it out due some idea she had in her head?????

    I make mine up and put it in canning jar and keep it the frig  I made up 6 apple loaf yesterday for a pot luck I had a bit left I used for some muffins .. 

    I make up and keep in the frig .. works great  my Grands will use it on oatmeal in the am .
