Parmesan Thyme Crackers . . . want the recipe?? Yummy with a glass of wine! From Ina Garten Back to Basics Cookbook (Barefoot Contessa-I love her!)
1 stick unsalted butter, 4 oz grated (not shredded) parmesan, 1 teaspoon minced fresh thyme leaves, 1/2 teas kosher or sea salt (reduce this if using salted butter), 1/2 teas ground black pepper, 1 1/4 cup all purpose flour.
Cream butter in a mixer for 1 minute. With mixer on low speed, add parmesan, thyme, salt, & pepper. After that's combined add the flour and combine until mixture is large crumbles (about 1 min). If dough is too dry, add 1 teas water. Dump dough onto floured board, press into ball, then roll into a 9 inch log. Wrap in plastic, refrigerate for min 30 minutes and up to 4 days (or freeze for up to 6 months). After dough is chilled, cut the log into 3/8 inch (or so) thick round slices and back at 350 for 20-22 mints until very lightly browned. (These bake best on parchment paper but not required, can just spray pan, they'll be browner on the bottom though).
Didn't have time to go to the store, using dried thyme. Which means today turned out to be a no spend day for me!
