Freezing potatoes?

    Freezing potatoes?

    I was wondering if you can freeze potatoes; specifially, I want to cut them into chunks, cook them, then freeze them to put into stew.

    Yes, I freeze potatoes.....I always sort out my potatoes and any that look like they're going bad I cook...that is the main reason I freeze them........I cut them in small bite sized pieces and cook in the microwave....not much water and stir them several times in a casserol with a lid on..cool....then I pack them in 1# butter tubs and freeze.....when I use them I usually fry them.....I have also used them for potato soup...they are a little chunky but mostly creamy.....I haven't used them in a stew so I don't know how that would work.....maybe if you don't completely cook them tender....I cook mine tender.....they are sure nice to pull out of the freezer for a quick meal....along with some cooked crumbled meat, like chicken, turkey, or even ham.....
