Is this corn too old to freeze?

    Is this corn too old to freeze?

    I have 3 bushels left of sweet corn that I haven't got around to blanching and cutting and freezing yet. It was picked last Wednesday night, and today is Tuesday. Is it too old now? Will it be tough? Should I try to freeze some of it today and some tomorrow? (I won't be home part of today to do it all) Or should I just dry it and feed to the chickens?

    It's been in the husk in feed bags since last Wednesday.

    Cinnamonhuskies, How does it smell? Can you pierce a kernel easily with your nail? That is how I judge it. But here corn seems to go bad quickly, guess that it is because of the heat. It has to be put up the same day that it is pulled. I had some get too hard this year because I was so tired that I could not finish it the same day, but the chickens were happy! At least if you give it to your chickens, you aren't wasting it.

     Michelle, boil an ear for a while and see how it taste. If Ok, then cut it off, cook it for a few minues longer than normal and freeze. Babs

    we were supposed to freeze it up last night but didn't...argh, but dh and I sat out back by the garden and needed to talk about what was going on our oldest son's life, so I guess that kinda took priority.

    We ate 7 ears of it at dinner last night and amazingly it was still good. maybe the cool temps here helped. The kernels weren't dimpled yet or anything.

    Hoping I'll get to it today...

     Good, I hate to lose fresh food when I know that it would taste so good in the middle of the winter. Babs

    When corn doesn't get picked in time and becomes tough I make freezer cream corn out of it.

    Heres the recipe if your interested

    20 cups of raw corn

    1 pound of butter

    1 small can evaporated milk

    1/2 cup sugar

    mix in large roaster and bake at 350 degrees for 90 minutes. Stirring every so often. cool bag and freeze

    This is not low calorie but it is an exellent use for corn that is past its prime.
