Re: Whats your best Poor Man's recipe???

I found a recipe similar to this on another frugal web site. At first glance this may not appear "poor man", but rest assured it is. Everything used here was purchased on sale, bulk, or at our local Dollar Tree store. It cost me about $1 per person for entire meal. This fed a family of four with enough for seconds and in one case thirds. My best friend used store bought family size can and it fed her family of 6.

My kids all time favorite is baked bean soup. I use left over homemade baked beans and process in food processor till smooth. Place in saucepan with a tad of water to bring to soup consistantcy. I add a 4 strips of crisp bacon coarsly chopped, ladel into bowles, sprinkle with grated cheese and scallions (optional). Serve with grill cheese sandwich. YUMMY!!

Easy and poor man's Mozzarella Sticks-this is also low carb.

    1 cup pork rinds, crushed

    1 egg, beaten lightly

String Cheese or Slices of Real Cheese, cut into sticks

Dip each cheese slice into egg then roll into pork rinds. Fry in oil, drain and serve with spaghetti sauce.

Fried cabbage with cottage cheese dumplings. Fry sliced cabbage and onions in oil and butter until done to your taste. Top with dumplings made from 1 c. cottage cheese, 1 c. whole wheat flour, and 1 egg. Stir those ingredients together and drop by spoonfuls into boiling salted water. When they rise, drain and serve on cabbage.
