    Chokecherry Syrup

    Found this recipe on line a few years ago and really like the way this syrup tastes, especially on buttermilk waffles.  Easy to freeze or can.

    Chokecherry Syrup Recipe

     

    Ingredients

    • 3 c chokecherry juice (see first step) .
    • 1/4 tsp almond extract .
    • 6 1/2 c sugar
     

    Directions

    • Step #1 Wash chokecherries, barely cover with water & cook, place this In a large-ish kettle, covered, for about 30 mins till the cherries are soft.
    • Step #2 Mash carefully & strain the chokecherry juice through a sieve or cheesecloth.
    • Step #3 Pour 3 c juice into a large kettle; stir in the the sugar.
    • Step #4 Cook on high, stirring constantly.
    • Step #5 Boil hard for 1 min.
    • Step #6 Remove from heat & skim foam.
    • Step #7 Add extract if using (almond extract gives a stronger cherry taste).
    • Step #8 To can: Pour hot syrup into sterilized hot jars to within 1/8th inch from top.

     I remember having chokecherry syrup when I was growing up. Brings back great memories.

     If you boil it a little longer, to the hard crack stage, you'll have chokecherry candy, which is very good.
