     Here's one more potato recipe and it's even from potato country. It usually works best with those yummy new red potatoes.  I choose out a pot full of little ones and boil them up. Then add a white sauce and fresh new peas from the garden.  It's considered practically a whole meal and I save it for the time of year when I can get both peas and potatoes picked fresh from the garden.  Eat this and a loaf of homemade fresh bread and you'll feel like you're back on the farm again.  If you live close to any potato farms find out when they're harvesting.  The small ones don't work well with the automatic harvesters and we go into the fields and pick up as many as we can carry and store.  In this area we harvest around Oct 1st.

    Here's another one using the little new potatoes.  Cook 1/4 lb. bacon, cut into small pieces until crisp.  Add chopped onion to taste and cook until transparent.  Add fresh green beans, water to cover  and cook until they are the way  you like them.  Then add the little potatoes and cook until done.  This is wonderful served in bowls with the broth.  And nobody has mentioned potato latkes, delicious!
