In case you haven't read/heard there is a huge peanut butter recall (yes, again) across the nation. It is affecting everything from the stuff itself to ice cream and candy bars that peanut butter is in - I mean EVERYTHING is getting the FDA warning for recall if it contains ANY peanut butter. There is even an investigation as to how this occurred on such a massive scale.
Today, we finished our last store-bought peanut butter. Now, we had purchased this giant canister (think huge coffee can size) a month before the recall started, so I knew it was fine. Also I checked the place it was distributed by when the recall fist started, but now, I trust no new jars of the stuff. So what's a person to do?
Flip that homesteading mindset into gear and off we go to a tasty solution...
We are MAKING our own peanut butter. I made butter today from the neighbor ladies cow's milk (THAT was cool!) so why not peanut butter.
Here's the recipe I'm using:
Prep time: about 10 minutes
Ingredients:
- 1 1/2 c. unsalted roasted peanuts
- 1 tbsp. peanut oil
- 2 TBS raw honey
Utensils:
- food processor
- bowl
- mixing spoon
- storage container
- measuring cups and spoons
Directions:
For smooth peanut butter:
- Mix the peanuts with the peanut oil, and pour the mixture into the food processor.
- Process the mixture until it's very smooth.
- Scrape sides of the processor often between blending to create smooth texture.
- Add honey and process a bit more
- Store your smooth peanut butter in a sealed container in the fridge. It will be good for 2 weeks.
For chunky peanut butter:
- Take about 1/4 cup out of your 1 1/2 cups of peanuts and set them aside.
- Mix the rest of the peanuts with the oil, and pour the mixture into the food processor.
- Process the mixture until it's very smooth, then stir in the peanuts that you had set aside.
- Scrape sides of the processor often between blending to create smooth texture.
- Add honey and process a bit more
- Process a few seconds more to create the chunks in your chunky peanut butter.
- Store your chunky peanut butter in a sealed container in the fridge. It will be good for 2 weeks.
Serves: 12
Serving size: 2 tablespoons
